Beef Bourguignon Recipe

Ingredients :

- 2 pounds of high-quality beef chuck, cut into chunks

- 2 cups of beef broth

- 2 carrots, sliced

- 2 celery stalks, sliced

- 8 ounces of pearl onions, peeled

- 8 ounces of mushrooms, quartered

- 2 bay leaves

- 4 sprigs of fresh thyme

- Salt and pepper to taste


Instructions :


1. **Prepare the Beef**: In a large bowl, toss the beef chunks with flour, salt, and pepper until they are evenly coated. This will help thicken the sauce as it cooks.


2. **Sear the Beef**: In a large, heavy-bottomed pot, heat the olive oil over medium-high heat. Add the beef chunks and brown them on all sides, working in batches if necessary. Remove the beef and set it aside.
