Baked Lemon Herb Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
- Place chicken breasts in a baking dish. Pour the lemon herb mixture over the chicken, turning to coat evenly.
- Bake uncovered for 20-25 minutes, or until chicken is cooked through and juices run clear.
- Remove from the oven and let rest for a few minutes before slicing.
- Garnish with chopped parsley before serving.
