Baked Lemon Herb Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  3. Place chicken breasts in a baking dish. Pour the lemon herb mixture over the chicken, turning to coat evenly.
  4. Bake uncovered for 20-25 minutes, or until chicken is cooked through and juices run clear.
  5. Remove from the oven and let rest for a few minutes before slicing.
  6. Garnish with chopped parsley before serving.
