Ratatouille Recipe

**Ingredients:**

- 1 large eggplant, diced

- 2 zucchinis, diced

- 1 red bell pepper, diced

- 1 yellow bell pepper, diced

- 1 onion, finely chopped

- 3 cloves garlic, minced

- 4 tomatoes, diced

- 1/4 cup olive oil

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper to taste

- Fresh basil for garnish


**Instructions:**


1. **Preheat your oven to 375°F (190°C).**

2. **In a large pan, heat olive oil over medium heat. Add onions and garlic, sauté until fragrant.**

3. **Add diced eggplant, zucchinis, and bell peppers to the pan. Cook until vegetables are slightly tender.**
