Sweet Potato and Black Bean Tacos
Ingredients:
- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 8 small tortillas (corn or whole wheat)
- Toppings: diced avocado, salsa, chopped cilantro, lime wedges
Instructions:
- Preheat oven to 400°F (200°C).
- Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper on a baking sheet.
- Roast sweet potatoes in the oven for 20-25 minutes, or until tender and lightly browned, stirring halfway through.
- Warm tortillas according to package instructions.
- Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, diced avocado, salsa, and chopped cilantro.
- Serve with lime wedges for squeezing over tacos.
