Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 8 small tortillas (corn or whole wheat)
  • Toppings: diced avocado, salsa, chopped cilantro, lime wedges

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil, chili powder, cumin, paprika, salt, and pepper on a baking sheet.
  3. Roast sweet potatoes in the oven for 20-25 minutes, or until tender and lightly browned, stirring halfway through.
  4. Warm tortillas according to package instructions.
  5. Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, diced avocado, salsa, and chopped cilantro.
  6. Serve with lime wedges for squeezing over tacos.
