Quinoa Salad with Chickpeas and Vegetable
Ingredients:
- 1 cup quinoa, rinsed
 - 1 can chickpeas, drained and rinsed
 - 1 cucumber, diced
 - 1 bell pepper (any color), diced
 - 1/4 red onion, thinly sliced
 - Handful of cherry tomatoes, halved
 - Fresh parsley or cilantro, chopped
 - Juice of 1 lemon
 - 2 tablespoons olive oil
 - Salt and pepper to taste
 
Instructions:
- Cook quinoa according to package instructions. Once cooked, let it cool slightly.
 - In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, cherry tomatoes, and fresh herbs.
 - In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
 - Pour the dressing over the salad and toss gently to combine.
 - Adjust seasoning to taste and serve chilled or at room temperature.
