Quinoa Salad with Chickpeas and Vegetable



Ingredients:

  • 1 cup quinoa, rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/4 red onion, thinly sliced
  • Handful of cherry tomatoes, halved
  • Fresh parsley or cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package instructions. Once cooked, let it cool slightly.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, cherry tomatoes, and fresh herbs.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Adjust seasoning to taste and serve chilled or at room temperature.
